I’ve been a chef since I was 16, with over 30 years of experience in the culinary field.
I opened my first café in the regional art gallery of Benalla, the first of its kind outside of metro Melbourne. I owned and operated this café for 14 years, offering 120 seats and hosting functions for up to 300 people, 7 days a week.
Later, I renovated an old pizza shop and launched Tutta Bella in Benalla, an Italian restaurant specializing in homemade pasta and pizza. Tutta Bella was open daily for breakfast, lunch, and dinner.
In 2010, I relocated to Yamba, where I took over Dunes in Bowlo before moving it to Yamba Fair. Subsequently, I managed the Kiosk and Lunchbox. Yamba has since become my permanent home.
My passion lies in making people happy through food and fostering a sense of community. I believe that everyone should leave our establishment happier than they arrived, whether through exceptional food, engaging conversation, or a small treat from behind the counter. This community-focused approach has been the hallmark of my cafés in Yamba.
I prioritise simplicity in food, focusing on flavor, quality, and enjoyment.
Although I am self-taught in baking, I take great pleasure in experimenting and creating new recipes. Ben, our primary baker and sourdough specialist, and I often collaborate and critique recipes to ensure they meet our high standards.
I am fortunate that my profession is also my passion. It never feels like hard work, as I truly love what I do.
I am supported by a team of dedicated and talented individuals who enhance my work environment. Each team member brings unique skills and a willingness to learn and create alongside me. Their commitment and enthusiasm make our workplace a dynamic and enjoyable space.
